There are many great restaurants in the Vail Valley and I had the opportunity to try one of Vail's newest restaurants, "Flame". Located in the Four Seasons Resort Vail, "Flame" is an upscale contemporary mountain steakhouse. For starters, the French Onion Soup and heirloom tomato salad with candied kumquats, basil pesto with aged balsamic, champagen vinaigrette are excellent. For the main course the 12 oz dry-aged bison ribeye melts in your mouth especially with one of the six sauces which are house made and the Ricotta Stuffed Bison Meatballs are one of the house specialities. Don't forget to order sides. One of the standouts was the white cheddar and jalapeno Mac and Cheese. "Out of Bounds" is the private dining room which features a large fireplace and a huge wine rack. The wine lists consists of over 200 different labels from around the world and over 30 wines by the glass. You may visit the website for a full menu: www.fourseasons.com/vail/dining/flame.
The $250 million dollar Four Seasons Resort Vail has delayed its opening again and there is currently no new opening date for the project.? The issues found were isolated, have been addressed and are in the process of being repaired.

Four Seasons Resort Vail, located in Vail Village, will be a full service, 500,000 square foot resort compete with amenities and services one would expect from a world-renowned resort.? Scheduled to open December 2009, this will be the first Four Seasons in Colorado.
Which will it be??? Solaris, Manor Vail, The Ritz Residences, Vail or The Four Seasons Resort Vail??
If you haven't been to Vail in awhile, be prepared to not recognize it.? (Or, sort of remember what used to be there.)? Cranes dominate the view from the valley floor.??But soon, several new and beautiful, high-end properties will be completed.
